This was a great read , Steve, thanks! I'm 19 days in but forever educating myself. Wish I'd been more prepared for the keto flu cos' that hit me HARD! Out the other side now though and hoping to see some improvements in my cycling endurance and less reliance on the gels and goos! Most vegetables that grow above the ground are high in fiber, vitamins, minerals, and antioxidants. They can be added to meat dishes, cooked on their own, or eaten as a salad. Vegetables are inexpensive, easy to prepare, and can be part of every meal. Most of them are quite low in carbohydrates, so it's hard to overindulge in this food group.
The first tip to get back to losing weight is to boost the amount of calories you are consuming. Say you're eating 1200 calories per day. Overtime, your body down-regulates so it just needs about 1000 calories per day to maintain basal function. I like it “ and I'm surprised I like it. I'm only down 5 lbs. after a month but I'm down 3 inches on my waist and 2 inches on my hips. I do feel better physically and I love not being hungry! I used to be that person who could eat pasta like a lumberjack “ now I often don't even finish my food. I have had a hard time sticking to 20 net carbs, I usually end up in the high 20's somewhere, but I'm in ketosis according to the testing strips. It's much harder to stick to 20 net as a vegetarian. Everything you eat has some level of carbs and they do add up. But overall, this is the only thing I've lost any weight or inches on in about 7 or 8 years. Starvation used to work until I hit 45 and then, forget it, I could eat 700 calories a day and not lose a pound. I'm so excited *something* is actually working.

The information in the first section was great, but the recipes were not as helpful as I had hoped. The ingredients are very expensive - I spent $130 shopping for just the first three days of meals and that didn't include the leg of lamb, which I skipped. Also, as a working mom, I would consider the amount of kitchen time as extreme. As an example, Day One includes a one-hour baking project for breakfast, followed by deviled eggs with bacon and avocado as a mid-morning snack, followed by a cooked chicken lunch, then a smoothie mid-afternoon snack, and a leg of lamb dinner with a side. Again, that's just the first day. Section 1 was great and I learned a great deal about keto lifestyle and issues. I would love the author to revise the meal plan and recipe sections to limit each day to no more than 90 minutes in the kitchen including prepping foods like boiling eggs, frying bacon, or cooking chicken which aren't currently included in her recipes times.

For a period of 3-4 days up to 2 weeks, you will be eating the minimal amount of carbohydrates and sugar (20 grams net carbs maximum per day). After this you may be able to add in small amounts of net carbs if your body can handle it, but probably not more than 50 net carbs total per day. This is tricky, because some people can't handle more than the 20 net carbs even after they have adjusted to ketosis. Others can handle 50 net carbs and easily stay in ketosis. If you feel fine at 20 net carbs and it doesn't bother you, than there's no reason to make any changes. You can test your ketosis by how you feel, or by actually testing - which is discussed in section 3.

No dates or peas, 2 of my favorites! 2-Go shopping and stock up on the basics- water, coffee, tea, spices, herbs, non-sugar sweeteners, lemon & lime juice, mayo, mustard, pesto, sriracha, broths, pickled foods, nuts & seeds, meats, eggs, wild caught fish, nonstarchy veggies, berries, avocados, full fat dairy, avocado oil, olive oil, butter, lard, bacon fat. 3-set up your kitchen with a food scale, food processor, spiralizer, hand mixer, and cast iron pan. 4- plan your meals, and 5 -exercise!
Ketogenic diets, like most low carb diets, work through the elimination of glucose. Because most folks live on a high carb diet, our bodies normally run on glucose (or sugar) for energy. We cannot make glucose and only have about 24 hours' worth stored in our muscle tissue and liver. Once glucose is no longer available from food sources, we begin to burn stored fat instead, or fat from our diets.
It's not for me, but it interesting to learn these things, and of course there seem to be good reasons for doing it for some people. I'm happy with the œeat less, exercise more diet for now, but I might try out intermittent fasting since I've seen a few things suggesting it might help with allergies? I doubt that's well supported, but I've liked what you've had to say about it, so since it's not a thing I have to spend money on to try out, might as well, right?
