It comes down to simple mathematics. In order to stay in ketosis, you need to eat a very very low number of carbs. And if you eat too much protein, this can actually knock you out of ketosis as well. Therefore, if you’re eating almost no carbs, and you are eating moderate amounts of protein, the ONLY remaining macronutrient you can consume to fill you up each day would be fat. Add in that consuming fat allows you to stay in ketosis, and you are consuming a high fat, medium protein, low carb diet.
Basically, fat within your blood travels as lipoproteins, along with cholesterol, proteins, and phospholipids. In order for an artery to be “clogged”, there needs to be a small tear in its inner wall first. These tears can be due to stress, smoking, a highly-processed diet, etc. In order for the walls to be repaired and thus prevent “clogging”, Vitamin E must be used. Vitamin E, being a fat-soluble vitamin, requires fat in order to be available for your body to use. Therefore, the consumption of fat can help your arteries self-heal and thus prevent “clogging”.
This is of course just an overview of what you can eat, but these are things I’m most likely going to pick up from the grocery store. I also didn’t want to include crazy expensive specialty items like Erythritol for beginners. I think we all get excited about making our favorite junk foods in the style of our diets right away. This is fine…but it can be very expensive, time consuming and exhausting. Stik with the basics, especially when first starting out!
Net carbs are what we track when following a ketogenic diet. This calculation is pretty straightforward. Net Carbs = Total Carbs – Fiber. For example, one cup of broccoli has 6g of total carbs and 2.4g of fiber. That would mean one cup of broccoli has 3.6g of net carbs. We count Net Carbs  because dietary fiber does not have a significant metabolic effect.

I noticed you put in the post that if anyone had questions that we could ask and so I have a big one that I need advice on if you don't mind. I have been living low carb for about 2 years now. My weight has fluctuated from 130 to about 118. I am 5'4" and female, 45 years old and mom to 5 children. My weight went up to 134 which is very uncomfortable to me because I have struggled with an eating disorder and so I really went low carb in an attempt to drop some weight. Well I have, but the problem is that I am restricting too many calories now. I have gotten down to 108 but know that 800 calories Is not enough. My question is about balance. I would not mind gaining some back but have a fear of gaining too much again. I don't want to go back there. I hiit train most days for about 25 mins. I use to do way too much. Do you have a plan that would balance my calories out so I can incorporate more Low carb options/keto and start eating normal again. I like your ideas and thought process behind all you post so I would appreciate any feed back you could give to me. Thank ML

Paleo and keto can overlap, though there are some major differences in the core of each way of eating. As pointed out in this study, a Low Carbohydrate Diet resulted in decreased bodyweight, abdominal circumference, diastolic blood pressure, triglycerides, insulin, and an increase in high-density lipoprotein cholesterol (the good stuff).
